Carrot ladoo recipe is very easy to make in few minutes with only few ingredients. Its delicious and perfect after lunch/dinner sweet bites or as a snack.
Ingredients:
Carrot - 2
Rava/Sooji/Semolina - 1/4 cup
Shredded Coconut - 1/4 cup
Sugar - 1/3 cup (6 tbsp)
Ghee - 2 tbsp
Cardamom/Elachi - 1/4 tsp
Salt - 2 pinches
Water – ¾ to 1 cup
Cashew nuts & Raisins
Steps:
1. To a heated pan add 2 tsp ghee and fry cashews & raisins and keep it aside.
2. Fry rava/semolina/sooji on low to medium heat and keep it aside to cool.
3. To the pan add the remaining ghee and then add grated carrots to it.
4. Stir it for 2 minutes; add ¾ to 1 cup of water and cook the carrots.
5. Cover and cook in medium heat and keep stirring in between.
6. Once the carrot is cooked, add sugar & 2 pinches of salt and stir well.
7. Add roasted rava and stir well. Then add coconut and mix it well.
8. Switch off the flame and add cardamom powder, roasted cashews & raisins. Mix well.
9. Allow it to cool.
10. Make equal size balls/ladoo with the mixture and Garnish each ladoo with a raisin or cashew.
